[Music] [Music] what's up everybody welcome to another cooking Journey with your boy GD nice I'm excited about today's recipe y'all just to prove it I wore this yellow shirt just to get ready for it today we're going to be making some of that good oldfashioned homemade banana pudding that's right that type of banana pudding that Grandma used to make and still makes y'all ready to get started with it let's do it let's look at our ingredients for the banana pudding few basic ingredients we've got whole milk we've got sugar unsalted butter vanilla extract allpurpose flour
kosher salt heavy whipping cream eggs rip bananas they make a difference I like to use R bananas whenever I make banana pudding they tend to actually give you better flavor so let's go stick with that Nilla wafers I like the Nabisco brand they seem to give off the best flavor uh I like their uh the taste of those over the other ones that I've tried out there so I like sticking with that brand okay for our equipment let's go with the mixing bowl and we're going to go with the steamer pot which is very similar
to a double Bower both of them allows you to use water as your primary heating method using this method will significantly reduce your chances of scorching or burn in your pudding mixture okay next we want to go ahead and mix our wet and dry ingredients I want to use the bowl that I will be placing in the steamer pot so when I build my pudding mixture I can easily just transfer right into my pot and start the cooking process to get started we're going to go ahead and add 2/3 cup of all Preppers flour one
cup of sugar and 2 cups of whole milk get all that mixed in and we're going to give it a good stir removing any lumps just take our time get it stirred around make sure you scrape along those edges get it off the sides we want to just make sure we remove all the lumps okay once we've got that done we can go ahead and set it aside for now the next thing that we want to do is go ahead and crack our eggs and we're going to separate the egg whites from the egg yolks
again I like using a hard surface and you just want to give it a crack and and just shift it rotate the yolk from left side to right side and watching the yolks drop all right and we're going to separate it like [Music] that and again just take your [Music] time fairly easy just separate it like so [Music] and we're doing approximately six eggs for this recipe all right next we want to go ahead and add these egg yolks to our [Music] mixture give it a good [Music] stir once that's done we're going to add
a pinch of salt that's all we need just a quick pinch next we want to go ahead and add two more cups of milk whole milk that's going to give us a total of four cups of milk for this mixture all right we're mixing thoroughly making sure there's no lumps so at this point our mix is ready to be put into heat [Applause] [Music] next I want to go ahead and place my mixture inside the steamer pot at this point your pot or boiler should be boiling once we get started and this process here is
going to actually take you probably about 10 to 15 [Music] minutes so keep in mind using this water heating method is going to reduce the risk of scorching or burning your PUD mixture in comparison to placing it directly on your stove's natural heating [Music] element so you do want to continuously stir this process here is going to take us a little while but you're wanting this to this mixture to thicken up and reach somewhat of a pudding texture again you want to sort of monitor this here you don't want to walk away from it and
allow it to actually harden up on you and that's when the lumps are going to start forming I've got about an inch of water inside the steamer keep in mind that your water should be at a rolling bow throughout the entire heating process let's keep it going just like this until it thickens up this is what you call homemade now as you can see it's starting to thicken up but I'm constantly stirring until I get to that put in texture like I said give it you know this is where you need a little patience takes
you know about 10 15 minutes but stick with it it is starting to thicken up very nicely it's really smooth so as you can see I have reached that consistency that put in texture that I'm looking for once you get that put in texture then you can go ahead I'm going to turn my heat off and at this point very important as it cools down I'm going to go ahead and add two tablespoon tablespoons of unsalted butter and one teaspoon of vanilla [Music] extract give it a good [Music] mix so we want this to cool
down let's let that butter melt [Music] this is the perfect put in texture oh man that's delicious so at this point we want to go ahead and set it aside and we can go ahead and start preparing our actual other ingredients for the next step uh give it about 10 15 minutes to cool down now if you want the cooling process to happen a little faster you can at this point go ahead and put it inside of the refrigerator so while our pudding mix is actually cooling off we can go ahead and start prepping our
bananas so as you can see these are ripened bananas and like I said these are preferred type bananas to use for your banana pudding okay so what I want to go ahead and do is just start cut giving these a good cut all right so and you know me I got a thing about these in pie pie so you just want to look at getting even cross cuts across the board with [Music] it not much to [Music] it all right [Music] now you don't want to take too much time with this ear process because if
you leave your bananas out too long the air will cause them to oxidize and they'll start turning brown on you and that's just not a pleasant look so keep that in mind when dealing with [Music] bananas now I bananas ready and we are ready to move on to the next step okay so now we are ready to actually go ahead and put this together so I've taken I mean our pudding mix has cooled down after being refrigerated now if for some reason you get like a little thick uh fil or it seems to have thickening
up just a splash of milk on top of this here and stir give it a good stir we'll loosen it back up and actually get it back to that pudding texture that um you left off with okay to layer our uh pudding we're going to go ahead and just put I'm a spoon a small amount on the base give me a good base Coating in there and this is going to be for cookies next we're going to align the base with wafers just like [Music] so this is really similar in ways to putting together lasagna
but you take your time you smell it it's giving off an awesome Aroma and it will be together in no time so after we've layered it with the Waf next we're going to go ahead and put a layer of the bananas [Music] down go ahead and just drop them like so there's really no formation to it you just layer it down get a nice even dispersement on the bottom and just keep it moving okay so your hands will get a little sticky with this here so um after we've done that we just repeat the steps
[Music] [Music] and we're going to do final layer of our [Music] cookies at this point we just set it aside and next I'm going to go ahead and prepare a whip top to finish this off okay so now we are ready to go ahead and make our topping for our banana pudding often times people use a mering but in this case I'm actually going to use a whipping cream mix uh that's going to have flavor and I really like that profile that I get from that so it's very simple it is super easy to make
so let's go ahead and get that done uh let's start off with the heavy cream and I'm going to get about 2 cups of heavy cream so I am going to be using my mixer for this one so you can use a hand mixer as well uh or you can actually Whip It by hand it's going to take a little longer a little more [Music] effort let's go ahead and pour that in and again I said that was two cups of heavy cream let's go ahead and get that started uh I'm going to start that
off on low so we're going to mix this for about 2 minutes uh our goal with this is to get soft peaks once it actually starts whipping this takes me probably about 5 minutes but um let's give it about 2 minutes of whipping on low well yeah on on a low speed setting and after that we're going to ahead and add about 1/4 cup of actual powdered um confectioner sugar you can use regular granulated sugar but the U confection sugar actually is going to melt um it's going to mix a lot quicker and more evenly
okay so it's been about 2 minutes so now I'm going to go ahead and slowly incorporate the uh confection of [Music] sugar let that get Incorporated so I'm going to go ahead and turn the speed up a little higher meanwhile I'm watching it though because EV this is going to start thickening up and um you definitely don't want to over whip this here because it will turn into butter quickly if you uh aren't paying attention to it the key to this is actually I'm going to actually be able to actually incorporate flavor and flavor makes
a big difference for me on my topping so this will actually enhance the actual banana pudding flavor that you're getting in there so this year will be a nice blend so at this point I'm going to slow it down a little bit and I'm going to go ahead and actually add my a teaspoon of the vanilla [Music] extracts get that well Incorporated turn it back up a little [Music] all right there we have it that's good [Music] enough okay so I'm just going to go ahead and put my topping inside of my pastry Bay [Music]
okay so next we are ready to go ahead and actually um get our whipping cream topping on top of our banana pudding mix here so I'm using my Piping Bag and I'm just going to go like so create a simple star effect have fun with this here you can use whatever method you like if you want to just simply whip it on and be done with it then by all means let's go for [Music] it we eat with our eyes so I tend to build it up a little bit just like [Music] so just to
finish it off with those crumbs from the wafers in the end I like to just gave it a little tap get some of the Dust on top of it just like [Music] that look at that folks gr Grandma's banana pudding y'all already know I am so ready to try this here all right let's give it a shot [Music] y'all yeah this looks just like [Music] Grandma M Lord have mercy Grandma be so proud of me y'all gosh you got to try this God this is [Music] good you know what I didn't slap myself this is
